In addition to some of those already listed, I've enjoyed reading the Anatoli Boukreev books The Climb and Above the Cloud's. IMO, The Climb is a superior account of the '96 Everest fiasco vs. the Krakauer version.
While backpacking, I like short story compilations. The Mammoth Book of Climbing Adventures edited by Jon Lewis has some fine Himalaya accounts IIRC. I tore it in two halves to keep the weight down.

If you are interested in Pakistan, this book is incredible. I highly recommend it. It also gets deep into the Himalaya of course.
