(3) I do 90% of my own meals - except for energy bars. Too lazy to do that. But from (2): I have tested their omelet bites recipe for breakfast. Excellent. My normal breakfast is rolled oats, granola, dried strawberries and dates along with a bite or three. I also dehydrate Greek yogurt and it comes out very well. You can add fruit, blend it and then dehydrate. Another trick with having rolled oats cook quickly is to blitz it in your food processor before adding boiling H2O. I assume that you have a food cozy.
(4) Regular meals: Dehydrated chili with beef. Don't bother blotting out the fat as some recipes insist. Instead, add breadcrumbs. Keeps just fine, though I refrigerate mine before the hike. Also Thai curries work well - see my other post today on what you can do at home. Lots of vegetarian Indian food dehydrates just fine. I have NOT had good luck dehydrating hummus however.
(5) I assume that you have a dehydrator. If not, I like Cosori dehydrator. Still going strong at 4+ years. Get silicone trays and liners. I dehydrate all of my own veggies. Eggplant dehydrates just fine after steaming. I do a eggplant, soy sauce and garlic mix as an appetizer.
(6) Miso also dehydrates fine and is a good soup base.
