"Old" freeze-dried food is OK if it was vacuum packed for long-term storage and not been opened or the seal has not been damaged. Once opened, it tends to get bad after a year. Hard to say on a 40 year old #10 can. Hey, but you are old enough that a bit more leached metals probably will not make a difference since we all at this age are headed for dementia anyway and your taste has gone south enough you will not even notice it. :D
