Ok, both the Bull trout and Mack came out great smoked. Mixed up 2 cups brown sugar with 1/2 c salt (about 1/2 smoked salt and the other non iodized sea salt), some dill, some garlic and spread mix over the fish dry and left for about 6 hours. Then wiped off the filets and stored in the refrigerator. Smoked about 5 1/2 hours. Mike, are you just smoking them or doing spices as well with the bull? and the mack?
