Newbie looking for advice

Just retired and always wanted to backpack...so here goes nothing. I am 52 years young and am trying to plan my first adventure with a buddy who also has little trail time. We went up to Levitt Lake last year for a couple of days fishing and I loved being off the beaten trail, as it were. Caught lots of stunted Brookies and a few rainbows. Heard there might be Golden hybreds in Koenig.
My buddy and I are looking to start with a couple days on the trail with lots of fishing. I have been lurking for a couple of days and have thoroughly enjoyed many of the posts, particularly those involving fishing. We initially thought of driving to Levitt lake and then hiking to Koenig and Latopie Lake...maybe hit Ski Lake also. Looks like pretty easy hikes and pleanty of fish.
Also thought of Roosevelt, Secret and maybe Poore Lake...again...at least Roosevelt and Secret from 108 seems easy.
Any suggestions would be greatly appreciated. Like I said we are newbies but have spent lots of time hiking on trails. Plan on taking a class this winter to learn navigation skills.//and lots of research.
Thanks,
Beast
